Welcome to The Pizza Pig.

 

My name is Nick and I am someone who has become a little obsessed with making pizza at home.

 

I didn't always love cooking. Until about four or five years ago I was much better at eating food than making it. Somewhere along the way that changed. What started as curiosity turned into a real interest in making things from scratch. Pasta, pizza and bread quickly became favourites, and recently I have even had a go at croissants.

 

Growing up with an Italian mum meant food and entertaining were always a big part of life. There were always people around the table and the kitchen was usually busy. I did not realise it at the time but that environment definitely planted the seed.

 

My pizza journey really started after a friend introduced me to the Gozney Roccbox. What looked simple turned out to be anything but. Pizzas with holes in them, burnt bases and plenty of failed attempts later, I realised there is a lot to learn when it comes to cooking pizza in a pizza oven.

 

Recently I started a series trying to make a crispy base New York style slice in my Roccbox. In the process I ended up creating something a little different. A hybrid between Neapolitan and New York pizza that I call the Neo x NY Pizza. The dough is lighter than a traditional New York pizza, but crunchier and holds better structure than a typical Neapolitan pizza.

 

I like bending the traditional rules, so alongside the classic styles I also enjoy experimenting with different flavour combinations and toppings.

 

To make things easier for people learning pizza ovens, I have built a pizza dough calculator. It allows you to use my Neo x NY dough recipe and automatically calculate the ingredient amounts based on the size and number of pizzas you want to make. As I continue tweaking and improving the recipe, I will also update the calculator so it evolves with the process.

 

This site and my socials are where I document that journey. I will be exploring different pizza styles, toppings and techniques as I go.
